Kakarakaya Karam (Bitter Gourd Spice Powder)
Kakarakaya Karam is a traditional Andhra-style spice powder made with sun-dried bitter gourd slices (kakarakaya) blended with roasted spices and garlic. Despite bitter gourd’s reputation, this karam is surprisingly flavorful, slightly bitter, spicy, and aromatic—a perfect side with hot rice and ghee or as a sprinkle on idli/dosa.
How to Use
Mix with hot rice + ghee or sesame oil
Serve as a side for idli, dosa, chapati
Can be sprinkled into stir-fried curries for added flavor
