Brinjal / Vankaya Pickle
Vankaya Pickle, also known as Brinjal or Eggplant Pickle, is a classic Andhra delicacy. Made using tender brinjal pieces, roasted and marinated with mustard powder, red chilli, garlic, and cold-pressed sesame oil, it carries the bold and earthy flavors of traditional Aavakayya pickles. It is spicy, tangy, and pairs beautifully with hot steamed rice and ghee.
